Prosper_Montagné

Prosper Montagné (pronounced [pʁɔspɛʁ mɔ̃taɲe]; 14 November 1865 – 22 April 1948) was one of the most renowned French chefs of the Belle Époque and author of many books and articles on food, cooking, and gastronomy, notably Larousse Gastronomique (1938), an encyclopedic dictionary of the French culinary arts. While Montagné was once as famous as his friend Auguste Escoffier, and was one of the most influential French chefs of the early twentieth century, his fame has faded somewhat. In the 1920s, Montagné, Escoffier, and Philéas Gilbert—their close friend and collaborator, and an acclaimed chef and writer in his own right—were the French chefs and culinary writers esteemed above others by many French journalists and writers. After Montagné's death, the chef and author Alfred Guérot's description of the troika as the "celebrated contemporary culinary trinity: Auguste Escoffier, the father; Philéas Gilbert, the son; Prosper Montagné, the spirit" reflects the reverence in which all three were held by the French culinary community.

Régis Marcon (born 14 June 1956) is a French chef and "Maître Restaurateur". He is the owner of the restaurant Le Clos des Cimes located in Saint-Bonnet-le-Froid in the Haute-Loire, awarded three stars by the Guide Michelin since 2005.

Urbain François Dubois (26 May 1818 – 14 March 1901) was a French chef who is best known as the author of a series of recipe books that became classics of French Cuisine, and as the creator of Veal Orloff, a popular dish in French and Russian cuisine. He is credited with introducing service à la russe to Western European dining, and the term chef.

Michel Bras (born 4 November 1946) is a French chef. His restaurant located in Laguiole in the Aveyron was rated three stars in the Guide Michelin since 1999. It is also classed in the "Relais & Châteaux" since 1992. He was classed several times among the 10 best restaurants in the world.

Cyril Lignac (born 5 November 1977 in Rodez, Aveyron) is a French chef.
He is owner and chef of the gourmet restaurant Le Quinzième (1 Michelin star), also of Le Chardenoux, a Parisian bistro located in the 11th arrondissement of Paris, another bistro located in the Saint-Germain des Près district: Aux Prés and two pastry shops La Pâtisserie Cyril Lignac
located in the 11th arrondissement of Paris and in the 16th arrondissement of Paris. Since 2010, his workshop Cuisine Attitude located in the 3rd arrondissement of Paris, had provided cooking and pastry classes. Chef Lignac is also TV presenter for culinary programs on the French television channel M6, and signed a series of more than 40 cook books which sold over 3 million copies.
