Garcia got his big break in 2007 when he won the Breeders' Cup Filly & Mare Turf. This was his first ever Breeders' Cup ride. The win, on Lahudood, meant that he was the third jockey ever to win his first Breeders' Cup race in his first attempt.Garcia is currently one of the top jockeys on the Canadian Thoroughbred scene at Canada's most prestigious track Woodbine.

He was the Minister of Consumer Affairs from 2020 to 2023. He has been a member of the Communist Party of Spain (PCE) and United Left (Izquierda Unida, IU) since 2003. In the 2011 general election, he was elected as an MP within that coalition. He has been the Secretary of Constituent Process in IU from 2014 to 2016, and in 2015, he was elected as an IU candidate for that year's general election. He is a researcher at Pablo de Olavide University in Seville.

The Amazing Race was filmed in May and June 2010 and premiered on September 26, 2010. Gary and Mallory were also one of the teams to return for The Amazing Race 18, which premiered on February 20, 2011. Ervin returned to the race to join Mark Jackson in The Amazing Race 24: All Stars, after Jackson's teammate William "Bopper" Minton was deemed unfit to race due to health reasons.
